The picture alone will tell you are in for a treat with this Taco Salad.

Here you have deliciously seasoned ground beef.  And then you get to pile on the lettuce, tomatoes, black beans, corn, red onions and cheese.  This is truly a feast in a bowl.  You then add creamy avocado or guacamole and sour cream and salsa verde.  You can use the sour cream and salsa verde as your dressing or add another favorite dressing.  There are some links below to some of Kevin’s delicious dressings too.

I also like to add some broken tortilla chips for some additional crunch.

This salad is bursting with flavor and just waiting for you to enjoy with friends and family.

Taco Salad

Prep Time: 15 minutes Cook Time: 15 minutes Total Time: 30 minutes Servings: 4

 

Ingredients

 

For the taco seasoned meat:

    • 1/2 pound ground beef
    • 1 small onion diced
    • 1 clove garlic chopped
    • 1 tablespoon taco seasoning (either store bought or Kevin’s homemade recipe below)
    • 1/4 cup water

For the salad:

  • 6 cups lettuce, sliced
  • 1 cup tomato, diced
  • 1 cup black beans
  • 1 cup corn
  • 1/4 cup red onion, diced
  • 1/4 cup guacamole or 1 avocado, diced
  • 1/4 cup sour cream
  • 1/4 cup salsa verde (either store bought or Kevin’s homemade recipe below)
  • 1/4 cup cheese such as cotija, feta, cheddar, crumbled or shredded
Directions

For the taco seasoned meat:

    1. Cook the meat, onion and garlic in a pan over medium heat until the meat is browned and drain off any excess grease.
    2. Mix in the taco seasoning and water and simmer until most of the liquid has evaporated, about 3-5 minutes.

For the salad:

  1. Assemble salad and enjoy!
Option: Replace the taco seasoned meat with Mexican style chorizoOption: Use a dressing like ranch or a creamy avocado dressing (aka guacamole dressing), cilantro lime vinaigrette, cilantro lime ranch dressing or jalapeno ranch dressing.
