These Cottage Cheese and Egg Muffins with Ham and Cheese are a great grab and go breakfast.
You can add your own favorite ingredients instead…maybe cheddar cheese and jalapenos or sauteed mushrooms and feta cheese…yum. Whatever you decide, they are deliciously light and moist thanks to the cottage cheese. Also you are starting off your morning with 18 grams of protein, I like that too.
Make a batch and you’ll have leftovers that you can microwave and have ready in 1 minute for another great breakfast. And as if that isn’t enough, they freeze well too.
Try these if you’re one of the many people that just doesn’t have time to make breakfast every day. You can thank me later.
